Authentic British Scones


This recipe comes from the TV series, America's Test Kitchen on PBS, which I highly recommend watching if you get a chance. It's a half hour show hosted by Chris Kimball, who is the editor-in-chief at the magazine Cook's Illustrated. I've learned so many techniques from this show, and they also test multiple versions of kitchen gadgets and tell you which is the best to buy.

Ok...on to the scones. This is an authentic British recipe, which means it does not contain sugar, and is not a sweet scone. It is meant to be served with jam and if possible, whipped cream!

Ingredients:

  • 3 cups of flour

  • 2 Tbs baking powder

  • 1/2 tsp of salt

  • 1 stick of butter (softened)

  • 2 eggs

  • 1 cup of milk

  • 3/4 cup scone flavor of choice (I used chopped pecans, but the recipe calls for currants. You could use dried cherries, chocolate chips, etc.)

Heat the oven to 500 degrees (yes, 500!). When we put the scones in to bake, we will lower the temperature. This gives them a nice golden color.

Mix all the dry ingredients together first, then add the wet ingredients and mix. Knead the dough 25-30 times.

Roll out the dough into a 9 inch circle and cut into individual triangles. Brush with an egg and milk mixture. If you like, I sprinkled a cinnamon sugar mixture on top of the scones before baking them.

Turn the oven down to 425 degrees, and put the scones in. Bake for 10-12 minutes.
