Quiche


One of my favorite brunch items: quiche! You can make any ingredient combo quiche that you like, and sometimes, the best part is that you can use leftovers from your fridge that you are trying to get rid of to fill your quiche. I buy pre-made pie crusts for this recipe, but you can make your own if you desire. Here's a recipe for a broccoli mushroom quiche, but I used the same ingredients to make a potato, pancetta, and kale quiche, just by substituting those ingredients for the broccoli/mushroom combination.

Ingredients:

  • 2 tablespoons butter

  • 1 onion, minced

  • 1 teaspoon minced garlic

  • 2 cups chopped fresh broccoli

  • 1 cup chopped mushrooms

  • 1 (9 inch) unbaked pie crust

  • 1 1/2 cups shredded cheddar cheese

  • 4 eggs, well beaten

  • 1 1/2 cups milk

  • 1 teaspoon salt

  • 1/2 teaspoon black pepper

  • 1 tablespoon butter, melted

Directions

  • Preheat oven to 350 degrees F.

  • Over medium-low heat melt butter in a large saucepan. Add onions, garlic, mushrooms, and broccoli. Cook slowly, stirring occasionally until the vegetables are soft. Spoon vegetables into crust and sprinkle with cheese.

  • Combine eggs and milk. Season with salt and pepper. Stir in melted butter. Pour egg mixture over vegetables and cheese.

  • Bake in preheated oven for 40 to 50 minutes, or until center has set.
