Asian Coleslaw
I remember my mom making this as a kid, and it's a nice change up on the traditional coleslaw. It has a great crunch! If you are watching carbs/calories, feel free to cut out the ramen noodles for an even healthier version.
Ingredients:
1 (16 oz) bag of coleslaw mix
1 cup of toasted, chopped almonds (or almond slivers)
3 scallions, chopped
3 Tablespoons of roasted sesame seeds
1 (3 oz) package of chicken flavor ramen noodles (save the seasoning packet for the dressing)
Dressing Ingredients:
1/4 cup oil
3 tablespoons of white vinegar
1/4 cup sugar
1 teaspoon of salt
1/2 teaspoon of pepper
Ramen Noodle seasoning packet
Directions:
Crumble ramen noodles and combine with sliced green onions, coleslaw mix, sesame seeds, and almonds.
Mix dressing ingredients in a separate bowl and whisk until blended.
Pour dressing over coleslaw mixture, and toss.
