Asian Coleslaw

I remember my mom making this as a kid, and it's a nice change up on the traditional coleslaw. It has a great crunch! If you are watching carbs/calories, feel free to cut out the ramen noodles for an even healthier version.

Ingredients:

  • 1 (16 oz) bag of coleslaw mix

  • 1 cup of toasted, chopped almonds (or almond slivers)

  • 3 scallions, chopped

  • 3 Tablespoons of roasted sesame seeds

  • 1 (3 oz) package of chicken flavor ramen noodles (save the seasoning packet for the dressing)

Dressing Ingredients:

  • 1/4 cup oil

  • 3 tablespoons of white vinegar

  • 1/4 cup sugar

  • 1 teaspoon of salt

  • 1/2 teaspoon of pepper

  • Ramen Noodle seasoning packet

Directions:

Crumble ramen noodles and combine with sliced green onions, coleslaw mix, sesame seeds, and almonds.

Mix dressing ingredients in a separate bowl and whisk until blended.

Pour dressing over coleslaw mixture, and toss.
