Vegetable Pesto Pasta with Spicy Italian Sausage


This is my boyfriend's recipe, and can easily be altered to fit your tastes (different vegetables, meat or no meat). We do not make our own pesto sauce, but by all means, you could definitely make that change! It is packed with nutrients and veggies.

Ingredients:

  • 1 bunch of asparagus

  • 1 large onion

  • 1 bag of spinach

  • 1 box of whole grain pasta (rotini or bow tie)

  • 1 jar of Classico Traiditonal Basil Pesto sauce

  • 1 pound of hot Italian sausage

  • Olive Oil

  • Garlic

  • Salt and pepper to taste

Directions:

Cook the rotini pasta till its al dente and drain.

Dice up on large onion and saute it in olive oil in a large skillet until tender. Season with chopped garlic, salt, and pepper. After cleaning your asparagus, cut into bite size pieces and saute with the onion. Once they are softened, add your bag of spinach until it is cooked down. Continue to season as needed.

In another pan heat up some olive oil, and cook your hot Italian sausage until cooked thoroughly, and browned. There should be no pink!

When your vegetables are cooked through, remove them from the pan and set into a separate bowl. Use the same skillet, and add a little more olive oil, about a cup of the cooked pasta, 1-2 tablespoons of pesto sauce, a scoop of the cooked vegetables, and about 1/4 cup of the cooked Italian sausage. Mix well, and let it cook for 2-3 minutes.
