Brussels Sprout Salad
Looking for a new way to eat brussels sprouts? I came up witht this easy side dish, and it's a great way to eat your vegetables! It's a flavor profile I really enjoy, but keep in mind the brussels sprouts are raw, so it will be a crunchy salad. It is also tart with the vinaigrette.
Ingredients:
1 bag of shaved brussels sprouts (if you can't find this, you could chop them up yourself).
1 cup of dried cherries
1 package of goat cheese (blue or gorgonzola would work here too)
1 cup of slice almonds
Vinaigrette recipe (see below)
In a big bowl, combine the brussels sprouts, cherries, cheese, and almonds. Mix up the vinegrette recipe below, and toss the salad. Enjoy!
For the vinaigrette
1/2 cup olive oil
1/4 cup white balsamic vinegar
2-3 tablespoons honey (add more if you prefer a sweeter dressing)
1/2 teaspoon sea salt
1/4 teaspoon freshly-cracked black pepper
