Chicken Shawarma with a Garlic Tahini Sauce


Who doesn't like a good chicken shawarma wrap? Although it is putzy to make, it is certainly an easy recipe, and is so good on pita or even on a salad.

Ingredients:

  • 1 lb boneless, skinless chicken breasts, cut into cubes

  • juice of 1 lemon

  • 1/2 cup plain low fat yogurt (I prefer FAGE brand)

  • 1/4 cup fresh parsley, minced (don't even think about getting dried

parsley...you will regret it!)

  • 3 garlic cloves minced (I used Spice World's pre-minced garlic that you can find at Kroger and Meijer. It is amazing stuff and as powerful as fresh).

  • 1 teaspoon salt

  • 1 teaspoon cayenne pepper

  • pita bread

  • Chopped tomatoes (I prefer roma 4-5)

  • Chopped cucumbers

  • Sliced red onion

Ingredients for the Garlic Tahini Sauce:

  • 2 tablespoons of tahini (I used Trader Joe's)

  • 2 tablespoons lemon juice

  • 2 garlic cloves

Directions:

In a small bowl whisk together chicken marinade: lemon juice, yogurt, minced parsley, grated garlic, salt, and cayenne.

  • Pour marinade over chicken breast cubes in a resealable plastic bag or glass dish. Refrigerate for 30 minutes or up to overnight.

  • While chicken is marinating, whisk together tahini garlic sauce in a small bowl. Check for seasoning and add salt and pepper to taste; set

aside. Chop up your tomatoes, cucumbers, and slice up your red onions.

To cook chicken, saute in a pan till cooked through. It does not take as long as you would think because the chicken is smaller when cubed. Keep a close eye and make sure it's well done.

  • To serve, spread a quarter of the tahini garlic sauce down the center of each pita. Top with cooked chicken pieces, lettuce, tomato and red onion slices. Wrap tightly and slice in half before serving.
